Rilakkuma Chocolate Cookies

  • 140 g unsalted butter
  • 100 g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 260 g flour
  • 10 g chocolate powder or more as desired


  • Sift the flour, baking soda and chocolate powder in a bowl and set aside.
  • Combine and butter and sugar in a bowl of a stand mixer and beat till well combined.
  • Add the egg and vanilla extract and continue to beat on slow speed until well mixed.
  • Add the flour mixture and continuing on low speed, beat till all the flour has incorporated into the dough.
  • Roll the dough into 3mm thickness and cut out desired shapes using a cookie cutter.
  • Place the cut out shapes onto a baking tray lined with baking paper and bake at 150 degrees for 30 minutes.
  • Let the cookies cool completely before storing them in air tight containers.
