Marinade the minced for at least 20 mins and set aside.
Trim both the ends of the french beans, rinsed with water, drained well and pat dry.
Heat up some cooking oil for deep frying the french beans. Once the hot becomes smokey hot, add the french beans quickly into the oil. The french beans will turn wrinkled in a matter of seconds once they are added to the hot oil.
Remove the french beans quickly and drain them well on paper towel to absorb the oil.
Heat up 1 tbsp of cooking oil in a wok. Add in the minced garlic, ginger and dried chilies and stir fried till fragrant.
Add in the minced pork/chicken and stir fried till almost cooked. Add in the french beans and seasonings respectively. Stir briefly and quickly for another 20 seconds to mix. Dish and serve immediately.
