For the Filling

Combine filling together, weight each portion at 30g each and shape into rounds. Set aside.
Sieve the kao fen and icing sugar together. Add in the remaining ingredients and combine into a soft pliable dough. (If using 2 colors for the mooncake skin, separate the dough into 2 portions and add coloring paste accordingly as desired.)
Measure each portion at 25g each and shape into rounds (If using 2 colors, combine the dough at 13g and 12g for each color and shape into rounds together.) Flatten the rounds and wrap in a portion of filling from Step 1 above. Repeat till all filling and skin are used up.
Place the mooncake from Step 3 into a kao fen dusted mooncake plunger. Press firmly and dislodge imprinted mooncake.
