Pandan Lotus Snowskin Mooncake

For the Snowskin

  • 150 g kao fen
  • 200 g icing sugar
  • 50 g shortening
  • Few drops of pandan essence & pandan green paste colouring
  • 200 ml iced water

For the Filling

  • 800 g of pandan lotus paste


  • Combine filling together, weight each portion at 30g each and shape into rounds. Set aside.
  • Sieve the kao fen and icing sugar together. Add in the remaining ingredients and combine into a soft pliable dough. (If using 2 colors for the mooncake skin, separate the dough into 2 portions and add coloring paste accordingly as desired.)
  • Measure each portion at 25g each and shape into rounds (If using 2 colors, combine the dough at 13g and 12g for each color and shape into rounds together.) Flatten the rounds and wrap in a portion of filling from Step 1 above. Repeat till all filling and skin are used up.
  • Place the mooncake from Step 3 into a kao fen dusted mooncake plunger. Press firmly and dislodge imprinted mooncake.
