8-10 pcs of prawns (de-shell & de-vein, leaving the tail)
4-5 pcs of salted egg yolks (cooked & mashed, setting aside ½ tbsp for garnishing)
2 chilli padis, sliced
10 pcs of curry leaves
1 tsp minced garlic
some egg floss (recipe link : http://eatwhattonight.com/egg-floss/)
some corn flour
some cooking oil
Instructions
Heat up some cooking oil in a wok. Coat the prawns with corn flour evenly and deep fried till golden brown. Remove and drain well on paper towel.
Reserve 1 tbsp of oil in the wok, add the minced garlic, chilli padis, curry leaves and salted egg yolks. Cook till the salted egg yolks sizzles and turn foamy.
Add in the deep-fried prawns from the previous step and stir to ensure all prawns are evenly coated with the salted egg yolks.
Add the egg floss now and give the prawns another 1-2 quick stirs and off the heat. Dish up and garnish with the ½ tbsp of mashed salted egg yolk set aside earlier. Serve immediately.
