Abalone and Shredded Chicken Porridge 鲍鱼鸡丝粥

  • ¼ cup cooked rice⁣⁣⁣⁣⁣
  • 100ml chicken stock⁣⁣⁣⁣⁣
  • 400ml water + more to cook till desired consistency⁣⁣⁣⁣⁣
  • 2 dried scallops⁣⁣⁣⁣⁣
  • 1 tsp minced ginger⁣⁣⁣⁣⁣
  • 1 tsp shallot oil⁣⁣⁣⁣⁣
  • 1 tbsp abalone brine⁣⁣⁣⁣⁣
  • 1-2 small abalones, sliced⁣⁣⁣⁣⁣
  • 1 small piece of roasted/blanched chicken breast, shredded⁣⁣⁣⁣⁣
  • Pinch of salt & pepper to taste⁣⁣⁣⁣⁣To serve with:⁣⁣⁣⁣⁣
  • Fried fritters⁣⁣⁣⁣⁣
  • Spring onion, diced⁣⁣⁣⁣⁣
  • Shredded ginger⁣⁣⁣⁣⁣
  • Fried shallots⁣⁣⁣⁣⁣
  1. Combine water, chicken stock, dried scallops and cooked rice in pot.⁣⁣⁣⁣⁣
  2. Add minced ginger.⁣⁣⁣⁣⁣
  3. Add shallot oil.⁣⁣⁣⁣⁣
  4. Cooked till it boils and simmer on low heat further.⁣⁣⁣⁣⁣Add the abalone brine.⁣⁣⁣⁣⁣
  5. Adjust with water if necessary to cook till desired consistency. Stir consistently at this stage.⁣⁣⁣⁣⁣
  6. Taste and adjust with salt and pepper.⁣⁣⁣⁣⁣
  7. Add shredded chicken breast, reserve some aside to top on porridge.⁣⁣⁣⁣⁣
  8. Add abalone slices and off the flame.⁣⁣⁣⁣⁣
  9. Serve with fried fritters, diced spring onion, shredded ginger and fried shallots. Serve hot immediately.⁣⁣⁣⁣⁣
Optional: You might want to add an egg too for extra goodness, which I did too ! But it's well hidden within the porridge. :)
