Honey & Ginger Glazed Chicken 蜜制姜汁鸡

  • 2 whole chicken thigh, cut into 3 parts each
  • 60g young ginger, diced
  • 1 tbsp rice vinegar
  • 1½ tbsp mirin
  • ½ tsp salt
  • 2 tsp sugar
For the Chicken Marinade :
  • 1 tbsp light soya sauce
  • 1 tbsp corn flour
  • ¼ tsp pepper
For the Sauce (Combine all together):
  • 3 tbsp honey
  • ½ tbsp light soya sauce
  • ¼ tsp salt
  • 2 tbsp of the ginger marinate sauce
  1. Poke the chicken all over with a skewer and marinate them with the marinate ingredients. Set aside in the fridge for at least an hour.
  2. Add the rice vinegar, mirin, salt and sugar to the diced ginger and mix well. Set aside.
  3. Air fried the chicken pieces at 170 degrees C for 10 minutes or until golden brown.
  4. Dish and set aside.
  5. Heat up a wok and stir fried ginger dices briefly. Add in the sauce and allow it to cook on low heat till it sizzles.
  6. Add in the air fried chicken from Step 3. Mix well to ensure the sauce coats the chicken parts all over. Allow the chicken to simmer in the sauce. Stir constantly and keeping a close watch as the honey will burn the chicken if overcooked. When the sauce thickens slightly, off the flame.
  7. Garnish as desired and serve hot.
