Szechuan Vegetable Pork Ribs Soup 四川菜排骨汤

  • 150g Sichuan vegetable (cut into quarters, soaked for at least half an hour and drained well)
  • 250g pork ribs
  • 1 carrot, cut into chunks
  • some button mushrooms
  • 3 tbsp of button mushroom water
  • 1 tbsp white peppercorns
  • 1L water
  • salt to taste (optional)
  1. Blanch the pork ribs in some boiling water until they turn white in colour. Rinse them over the tap water and drain well.
  2. Place the white peppercorns in a soup stock bag and add them to the pressure cooker pot together with the blanch pork ribs, carrots, button mushrooms, mushroom water and szechuan vegetable and water.
  3. Pressure cook for approximately 25-30 minutes.
  4. Release the pressure completely and check if pork ribs is cooked to desired tenderness.
  5. If not, pressure cook for another 10 minutes or so.
  6. Serve the soup hot immediately.
