Lemon Garlic Chicken 柠檬蒜蓉鸡

  • 4 pcs of boneless chicken thigh
  • 1 tbsp olive oil

For the Chicken Marinade:
  • 1 tbsp light soya sauce
  • 2 tbsp ginger juice (grate some ginger and squeeze out the juice by hand)
  • 1 tbsp hon mirin
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 2 tbsp minced garlic
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 1 tsp paprika powder

For Garnishing:
  • Some shredded parsley
  • Some chilli flakes
  • Some lemon slices
  1. Marinate the chicken with the marinade ingredients and rub well all over the chicken. Set it aside overnight in the fridge.
  2. Heat up 1 tbsp of olive oil in a frying pan and pan fried the chicken thigh on both sides until lightly browned. Add in the chicken marinade and reduce heat to low.
  3. Allow the sauce to simmer on low heat till it boils. Cover the pan and allow the chicken to continue simmering for another few minutes, turning it occasionally to allow the chicken to be evenly browned and well coated with the sauce.
  4. Increase the heat to high to allow the sauce to be absorbed and thicken. When the chicken is well grilled and sauce is much reduced and thickened, remove from flame.
  5. Garnish as desired and serve hot.
