Stir Fry Glass Noodles with Mushrooms & Minced Meat

Happy New Year 2024 ! Time flies during Covid and times flies even faster after Covid. Felt pretty unproductive in cooking and baking in 2023 as was too occupied in checking off my bucket list during the year. Nevertheless this year shall be better as I have decided to just take things slow and focus more on what I love to do most, and this is one of it.

Glass noodles, our so-called Tang Hoon in Hokkien dialect or 冬粉. It has a chewy and smooth texture after cooking and I would address this dish as a hybrid version of the Thai Style Glass Noodles with the Korean Japchae because it comes with several kinds of vegetables such as cabbage, spinach, carrots along with dried shitake mushrooms and added some minced meat as well for extra proteins.

Ingredients used

The gist of this dish will be the seasoning that comes together that make the noodles extra tasty. Definitely a dish that you will re-create again because it’s so versatile that everyone in the family will love it.

Stir Fry Glass Noodles with Mushrooms & Minced Meat

  • 2 servings of glass noodles (soak in water till soften)

  • 2 tbsp cooking oil

  • 2 tsp minced garlic

  • 2 dried shitake mushrooms, sliced (retain water used to soak mushrooms)

  • Some cabbage

  • Some spinach

  • Some carrots shredded

  • Sesame seeds (for garnish)

  • Chili padi, diced (for serving with)

  • For the Minced Meat Marinate :
  • 80g minced meat

  • 2 tsp light soya sauce

  • 1/2 tsp sugar

  • Pinch of pepper

  • Seasoning (combine all together) :
  • 250ml mushroom water

  • 1 1/2 tbsp oyster sauce

  • 2 tsp light soya sauce

  • 1 tsp dark soya sauce

  • 2 tsp fish sauce

  • 2 tsp sugar

  • 1 tsp sesame oil

  • Pinch of salt and pepper


  • Heat up cooking oil and saute garlics and mushrooms.
  • Add cabbage and stir fry till they turn soft.
  • Add in marinated minced meat and stir fry till they are cooked.
  • Add in glass noodles and all the rest of the seasoning.
  • Stir fry till all the glass noodles are evenly coloured.
  • Add in spinach and shredded carrots. Continue stir fry till all the spinach has withered.
  • Add in diced chili padi if desired and garnish with sesame seeds before serving to enjoy !
