Grilled Tom Yum Squids 东炎烤苏东

It’s the first day of October, which marks the beginning of the last quarter of the year ! And so, I decided to blog a new post as well to keep the blogging momentum going. 


Grilled sambal stuffs are very much one of the local delights in our night hawkers, such as grilled stingray, squids, seafood, etc. But their prices have constantly been quite pricey even though they are hawker foods. I recalled that my favourite grilled bbq stall has its minimum price raised from 8 to 10 to now 12 bucks. 

Deciding to dine out less often and cooked more at home too, I would love to re-create all kinds of my favourite hawker delights as much as possible too. So last weekend, I grilled this Tom Yum Squids on a banana leaf from my stove top. This dish is a 100% no brainer which will yield a 100% success. Simply marinate the squids with the ingredients stuffs and grilled them on a banana leaf for the ultimate aroma. 

I reckon you can do this 100 times and you will still keep loving this dish, like how we never fail to enjoy a grilled bbq stingray or seafood for a night dinner or supper whenever we patronise the Blk 85 Bedok North or Chomp Chomp food centre. So other than Grilled sambal stuffs like my other recipe here, this Grilled Tom Yum Squids is in no way less inferior. In fact, I much adore this dish better than sambal now because it has an added twinge of sourish and refreshing after taste in comparison.

Ingredients
  • 1 squids, cut into rings
  • 1 pc banana leaf
  • 2 tbsp cooking oil
  • 1 lime, cut into half

For the Squids Marinade:
  • 1 tbsp tom yum paste
  • 1 lemongrass, sliced
  • 1 ginger flower, sliced
  • 3-4 shallots, sliced
  • 1 chilli, sliced
  • 1 tsp sugar
Instructions
  1. Combine the squids rings together with the marinade ingredients. Mix well all together and set aside in the fridge for at least an hour.
  2. Add in 2 tbsp of cooking oil in a wok and place a banana leaf on top.
  3. Place the marinated squids on the banana leaf and grilled till all are cooked. Add more cooking oil if the banana leaf is burning out too fast.
  4. Transfer the squids on banana leaf to a plate and serve with lime immediately.
Notes
You can replace the squids with fish or other seafood of your choice too ! Adjust grilling time accordingly as such.
