Finally I did this !! Has always love Pandan chicken whenever I dine at restaurants or food joints and loving the unwrapping of the pandan leaves that encased the chicken. The chicken after being infused with the aroma of pandan leaves is nothing short of fragrant and more fragrant !
But I always have this concern about the pandan leaves getting all burnt and black after deep frying them in hot oil. More especially so if you are bent on getting the chicken fully cooked on the inside yet the pandan leaves are already all burnt by the time this happened.
So I tweaked the cooking method a bit, and instead of deep fried, I tried air frying them instead towards the end of the cooking. And did this worked ?? You bet it did !! The chicken is first stir fried to done before wrapping them in the pandan leaves. The oil that seeps from the chicken during stir fried coats the pandan leaves well and sealing them with a toothpick before popping them into the air fryer all
together for the last grilled moments.
This ensures that the pandan leaves will not get burnt out due to the prolonged cooking time to cook the chicken and at the same time, the chicken gets cooked real and thorough right from the inside.
And best of all, you save the fuss of cleaning up your kitchen since that’s no deep frying involved and hooray to zero oil splatters !

Pandan Chicken 班兰鸡

Ingredients
- 2 boneless chicken legs, cut into smaller pieces
- ½ tsp salt
- ½ tsp curry powder
- 1 tsp onion powder
- 1 tsp corn flour
- ½ tsp sugar
- ¼ tsp sesame oil
- dash of black pepper
- 2 chili padi, diced (optional)
- 2 shallots, diced
- 2 tbsp cooking oil
- some pandan leaves + toothpicks
Instructions
Marinate the boneless chicken legs with all the rest of the ingredients except the cooking oil. Cover and set aside for at least 3 hours in the fridge.
Heat up the cooking oil in a pan and stir fried the chicken pieces till they are cooked and turn golden brown in colour.
Coil the pandan leaves around the chicken pieces and secure them tightly with toothpick.
Place the pandan chicken in the air fryer basket and air fried at 200 degrees C for approximately 9 minutes.
Serve hot.
