I am so in the mood for chicken wings these days that it literally becomes a wings binging on an almost daily basis ! From the hawker styled grilled chicken wings, to fast food wings to korean chicken, the list just goes on and on ! LOL. So you can imagine what’s next on my list !!


It’s non other than these Tom Yum Chicken Wings !! Thai styled wings is slightly different from the rest on the list. When we talk about chicken wings, it’s mainly savoury base and either grilled or deep fried. Tom Yum flavour is delicious as there are a few kinds of tastes involved, some sour, some spicy and some savoury. 


And I quite notice the practice of poking the wings with a skewer or cake tester before seasoning as this allows the marination ingredients to seep into every part of the wings. What we had from wings are mostly savoury on the skin while the interior is quite blend at times as marination usually stays on the surface of it. With this extra effort, the marination will get into the interior as well and allows the wings to be fully marinated. I love to leave the marination overnight too as the longer time allows the chicken to absorb the flavours better.

  • 8 pcs mid-joint wings
  • some cooking oil

For the Marinade (combine all together):
  • 1 tsp fish sauce
  • 2 tbsp tom yum paste
  • 1 lemongrass (used only the bottom part and cut into sections)
  • 1 shallot, sliced
  • 2 tsp sugar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp light soya sauce
  • juice of ½ lemon
  • 2 tsp corn flour
  • dash of pepper
  1. Wash and clean the mid-joint wings and drain well. Poke the chicken wings all over with a skewer.
  2. Combine all the marinade ingredients together and rub it all over the chicken wings with hand. Set it aside in the fridge and allow it to marinade overnight.
  3. Heat up some cooking oil. When the oil is hot enough (bubbles start to sizzle around a chopstick place into the hot oil), reduce the heat to low. Deep fried the chicken wings till golden brown and cooked.
  4. Dish and serve hot.
