Right after our National Jubilee month, we are heads into the election fever. A season where Singaporeans gathered once and again, for the national day celebrations first, then the election rallies that keeps everyone on the toes. This year surely seems to be quite a happening year… where every Singaporean gathered to show their love for the nation once and again. And so, for the fun of it, I had the Roasted Herbs Chicken complemented with some cut out shapes of the moon and stars which symbolize our national flag and the heart which resembles our love for the nation from some blanched potatoes and carrots. Doesn’t that spruce up the whole presentation and whet up your appetite immediately ? Hehehe !

The extra 2 days of holidays must be of extreme joy to everyone, me in particular! I have such a whole backlog of to do, to cook, to bake, to blog list that I am due to accomplish. And does anyone ever be like me that whenever you had something you so wanna do in your mind, you would buy all the stuffs in preparation but did not get down to doing it eventually because of no time and then the ingredients or stuffs would somehow idle around till your inspiration is gone and you decided not to make it anymore and move on to something else ?? Sighhh…. It’s so sinful I know… Hence, I already tried to minimize the occurrence of such impulsive inspirational purchases, but somehow I do still have some backlog to clear….

Coming back to the Roasted Herbs Chicken, this is basically quite a brainless task. Just marinade and pop the chicken into the oven for baking. The beauty of oven baked food is akin that to the air fryer, no oil used, healthy as it can be. No worries of spurting oil or messy clean up. I can literally shove the baking dish into the oven, go for a bath and by the time I am done, the food is just nice and ready. That’s the beauty of technology in the cooking evolution.

Roasted Herbs Chicken

Ingredients
  

For the Ingredients

  • 3 pcs of boneless chicken leg/whole leg
  • some carrots cut into shapes as desired or simply diced
  • some potatoes cut into shapes as desired or simply diced
  • 1/2 onion sliced

For the Chicken Marinade

  • 2 tsp mixed herbs
  • 1 tbsp light soy sauce
  • 1/2 tsp dark soy sauce
  • 1/2 tsp sesame oil
  • 1 tbsp shaoxing wine
  • 1 tbsp worchester sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 1/2 tsp sugar

Instructions
 

  • Marinade the chicken overnight.
  • Blanch the cut out potatoes and carrots in boiling water till soft.
  • Lay the bottom of the roasting tin with the sliced onion. Place the marinated chicken on top of the onions and spread the blanched carrots and potatoes all over.
  • Bake in pre-heated oven at 190 degrees C on full fan mode for 35-40 minutes or until cooked (till the meat it is no longer pinkish within).
