If you are a frequent hawker food go-er, you would not have missed this Chinese Styled of Grilled BBQ chicken wings served with the spicy garlic chili that we often ordered as a side dish to share alongside with the main course. The slightly charred and grilled wings together with the very spicy chili sauce somehow managed to tantalize our taste-buds so well that we could not resist ordering them. It’s liked you seen the people at the table beside you with a plate of it, you can’t help but place order for the same as well, even though you might not have any craving for them. But when the wings arrive, you know you have no regrets from the fact that they are easily polished off the plates in no time. It’s a finger food that pleases everyone and anyone.

The good piece of news is.. you can have the same kind of such grilled wings at home too ! They are easily replicated and bring along the same, if not better flavor as those from the hawker centres, despite us not having a charcoal grill at home. Because we have the option to use fresh chicken wings instead of frozen ones and in terms of taste and tenderness, they definitely wins over, especially when we do not need to have any tenderizer or MSG to conceal the frozen taste.

You can choose to use the fresh chicken mid-joints or chicken wings from PurelyFresh. If you prefer a more meaty portion, I would generally recommend the mid-joints which is always my favorite but as I happen to have the wings available instead, I decided to go along with them.

For such Chinese styled of grilled BBQ wings, they taste better generally when they are slightly more charred. For an even more flavorful wings, be sure to leave the marinate overnight to allow the wings to absorb the flavors fully, if possible. In that way, both the inside and outside of the wings will be bustling with the sweet garlicky savor. While many recipes use honey or malt sugar in this dish, I had done without them instead since I do not have any and came out with my own “concoction” based on how I would love my wings to be. Just like those at the hawkers will serve the wings with lime, but I served mine with lemon slices instead ! Hehehe !!

Chinese Style Grilled BBQ Chicken Wings 中式烤鸡翅

Ingredients
  

For the Marinade

  • 10 pcs of chicken wings/drumlets/mid-joints
  • 1 tbsp light soy sauce
  • 1 tbsp chinese wine
  • 1 tbsp oyster sauce
  • 1/4 tsp pepper

For the BBQ Sauce

  • 1 tbsp minced garlic
  • 1 tbsp fried shallots
  • 1 tbsp dark brown sugar if not available, can replace with 1 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chinese wine
  • 1/2 tsp sugar
  • 1/2 tsp sesame oil
  • 1 tsp corn flour
  • 1/4 cup water

For the Garlic Chilli Sauce (To mix well in a food processor)

  • 1 tbsp minced garlic
  • 3-4 chilli padi chopped
  • 2 tbsp sugar
  • 1 tbsp sweet rice vinegar
  • juice of 1/2 lemon
  • dash of salt

Instructions
 

  • Marinade the chicken overnight in the fridge.
  • Combine the BBQ sauce and cook over a low flame until the sugar dissolves and mixture is slightly thicken.
  • Brush the BBQ sauce all over the wings and place them on the oven metal rack and ensure a baking tray is placed beneath the rack to catch any overflowing sauce.
  • Bake in a pre-heated oven at 190 degrees C for 25 minutes. Twice during the baking time, remove the rack and turn the wings over and brush the BBQ sauce all over. Continue to grill-bake the wings until all are cooked through.
  • Garnish with shredded parsley and serve with the garlic chilli sauce.

Notes

The lemon juice used in the Garlic Chilli sauce can be replaced with lime juice too.
