It’s been a tiring night for everyone of us, isn’t it ? Staying through the night in anticipation for the entire election results. But I must say, the night was much bearable than the previous election, as we were still expecting that we could only get back to bed at the earliest being 4 or 5 am. But all was concluded at around 3am, which was kind of earlier than the previous round. Our lives will be back to normal after today. No more rallies, no more election fevers, no more tense following up of campaigns and all. Hahaha… felt like a sudden loss, just like when you have completed a very exciting drama serial, suddenly life becomes “empty” and “nothing to chase for”. Oddly enough, I do get this kind of feelings at such times. How about you ?

Since life is back to the usual gear, so it’s back to the kitchen again ! Now people ask me if I do cook often, like everyday. But actually I do not, in fact I only cook during the Sundays, coz that would be the only day where I would have more time and also due to Mondays blues, I have the habit of lunching in in the office on Mondays and hence I could jolly well prepare my own lunchbox at the same time.

And when it comes to a lunch bento, the easiest would definitely be something bones free. However, if you do crave for some fish meal in your lunchbox, bones free option might be limited. Hence, I prepared this sweet and sour fish not long ago, and serve the extras for the lunchbox by pairing it with some stir fried cabbage.

There are a few kinds of fish that you can used as the sliced fish for this dish. I used the red grouper sliced fish this time, but other options can include the batang or mackerel fish. Both options can be found and purchased from fresh online groceries store, PurelyFresh

I do love anything sweet and sour, be it poultry or seafood. And it’s a definite kind of dish that fits all, be it the kids or adults. No one can or should resist this savoury dish! And since life has resumed normality, it’s time to kick start my online shopping frenzy once more ! Sweet & Sour Fish 酸甜鱼片

Ingredients
  

For the Ingredients

  • 200 g sliced fish batang/mackerel/red grouper
  • 1 tbsp minced garlic
  • 1/2 onion
  • few cherry tomatoes halved
  • some cooking oil
  • some potato starch flour

For the Fish Marinade

  • 1 egg white
  • 1 tbsp lemon juice
  • 1 tbsp chinese wine
  • 1 tsp corn flour

For the Sauce

  • 2 tbsp tomato sauce
  • 1 tbsp chili sauce
  • 1 tbsp sugar
  • 1 tbsp sweet rice vinegar
  • 1 tbsp chinese wine
  • 1 tbsp lemon juice
  • 50 ml water

Instructions
 

  • Marinade the sliced fish with the marinade ingredients for at least 30 minutes.
  • Heat up some cooking oil in a wok and coat the sliced fish evenly with the potato starch flour. Deep fried the sliced fish in coated flour in the hot oil till light golden brown. Work in batches and drain the fish on paper towels.
  • Combine the ingredients of the sweet and sour sauce together. Heat up a deep frying pan with some cooking oil and add the minced garlic and onion. Stir fried slightly till aromatic.
  • Add in the deep fried fish, the sweet and sour fish and cherry tomatoes respectively. Stir to ensure all the fish are evenly coated with the sauce. Dish and garnish with thinly sliced spring onion before serving.
