It was my first time to order online for fresh groceries and seafood and I must say, it’s indeed quite a breeze. In fact, I seem to buy almost everything online now except for fresh produce. I love the fact that I can laze back in bed longer during the weekends now, without going through the early morning rush to grab the fresh produce and even more so for the delivery that comes by as I no longer need to lug a trolley basket chiong-ing around the neighbourhood like a mad aunty. You really ought to see the crowds at my nearby supermarket, especially during the mornings, when the packers will start to unload all the fresh fruits and produce onto the shelves. It can be very overwhelming at times !!

I serve my poached salmon together with some boiled carrots from the soup stock that cooks the salmon and some aglio olio. And all it takes for this healthy dish is less than 30 minutes ! It’s as good as it can be !! Sometimes the best things in life are those that are drawn out from simplicity, isn’t it ?

After all, salmon is quite an expensive fish to begin with and to cook it the simplest healthy way to retain the most nutrients out of it will ensure your money that goes into it is well spent too !

Poached Salmon

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 2

Ingredients
  

  • 1 pc fresh salmon sliced into halves
  • 4-5 stalks of coriandar
  • 1 pc carrot sliced
  • 1 onion sliced
  • 2 cups of chicken stock
  • 2 cups of water
  • 1 tsp garlic powder
  • some salt

Instructions
 

  • Sprinkle some salt on the salmon and rub all over it.
  • Combine the chicken stock and water in a large wok over high heat. Add the onion, carrot, coriander and garlic powder.
  • Once the stock has boiled, reduce the heat to medium. Lower the salmon into it, ensuring that the volume of water just cover the salmon.
  • Cover the wok and let it cook for another approximately 5 to 7 minutes until the colour of the salmon turns to light pinkish.
  • Remove the salmon, sprinkle some black pepper powder over it. Serve with carrots or other vegetables as desired.
