My lappie retired faithfully recently and I was contemplating for the longest time whether I should be getting a new one since I am I-pading most of the times now. With the exception of blogging and photo editing where they are done mostly using the office lappie now, opps… (hope the boss is not reading this !)… And then in a rather spur of the moment, I went online shopping… and that’s it… the fate is sealed.. it’s mine now !! Hehehe.
So here comes my first blog post on my new lappie. Simply loves the speed and resolution and it’s indeed a far cry from the old one. But still need some time to adjust to it.. since Windows and Mac are indeed different in terms of some operations.
Well, I had a sudden craving for Kenny Rogers’ muffins recently and after consulting Mr Google, I realised that most of the recipes found are somwhat similar. So there must be some truth in having the same recipe in every website, right ? It SHOULD BE the real recipe then ~ I kept thinking.
Then again, after attempting it, it’s still lacking of a taste I am looking for. I can’t tell what’s the real difference coz it’s been like donkey years since I had the actual KR muffins. And unless I have some real KR muffins side by side on a blind test, seriously, I can’t tell what’s omitted.
But some tried and claimed it tasted like the real KR. Well, I had my doubts still.
Well, I do love the rustic feel of the muffins tops. And especially I used a square muffin tray this time, they does look a tad like the real country muffins, don’t they ?
The recipe calls for a 20 minutes baking time on a 200 degrees heated oven. It was too long for my oven heat as the base and side were rather darkened after baking. I shall attempt a 15 minutes bake the next round. Hopefully it will turn out better.
And I gotten a very good purchase at Ikea !! This pink pokka dots 2-tier tray !! Lovely for all bakes and pastries display and the pastel pink is just so sweet for every gal’s delight. Amazing priced at $9.90 too during the sale !!
Finally, the recipe to share for KR muffins but I believed they can be widely sourced from every google site. For those who are lazy, here’s it. Do try and let me know if you can tell the difference ? Or they are as good as the original ones ?

Kenny Rogers Corn Muffins

Ingredients
- 1/2 cup unsalted butter
- 2/3 cup sugar
- 1/4 cup honey
- 2 pcs eggs
- 1/2 tsp salt
- 1 1/2 cups flour
- 3/4 cup yellow cornmeal
- 1/2 tsp baking powder
- 1/2 cup milk
- 3/4 cup frozen yellow corn
Instructions
- 1. Preheat oven to 200 degrees C.
- Cream together butter, sugar, honey, eggs and salt in a large bowl.
- Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.
- Add corn to mixture and combine until corn is worked in.
- Grease a 12-cup muffin pan and fill each cup with batter. Bake for 20 minutes or until muffins begin to turn brown on top.
