Announcement !! and…. a Kit Kat+Oreo Cheesecake !!

Finally ! Cookies ordering is now available online !! Glad to share that cookies business is still on-going so far and the results are rewarding. So you can be sure of what I am busy with nowadays…. Coming up with new cookies flavours and catering for orders. And of course, working on the online ordering website for Chunky Cooky. Having had this idea for quite sometime already and working towards my 2013 resolutions, this is surely part of the desired plans.

Of course, Chunky Cooky Online is still in the implementation stage. So the website is basically quite bare. But if time permits, I will slowly improvise it to include more options for cookies ordering yeah. And most importantly, hopefully more customers will love my cookies and come back for more. So friends and pals, spread the word please !!! ^-^


And of course weekends have been packed for me as usual. I realised I had so little time for myself ! I haven’t been shopping for weeks !! But whenever I had that little bit of spare time, I love to cook up a storm… But cooking for this weekend has been the usual stuffs since it’s a “clearing fridge” week so nothing fanciful to blog about… but I baked something delightful instead – A Kit-Kat Oreo Cheesecake !!!

Why Kit Kat arh ? The inspiration came from a birthday cake that I have eaten donkey years back, and that other than the dark chocolate mousse, kit kat wafers can be found among the layers and instead of the plain old Oreo cheesecake that we often seen around, it set me thinking to incorporate some surprise to it by adding some kit kat too ? Furthermore since the house is never short of chocolates, it seems a pretty good idea to do a stock clearance of the fridge as well.

Next, why a cheesecake then ? Well, it’s that monthly fridge’s stock take event… and clearing away alot of expired stuffs already made my heart twitch too much. Determined not to let the cheese go to waste in time to come, I decide I should make it useful by converting it into a cheesecake, isn’t it ? Those who has taken a bite of the cheeesecake…..rest assured lar.. you are safe so far, aren’t you ? The cream cheese has had 3 more months of shelf life to go. Phew, heaved a sign of relief arh ? Hahaha !

The Kit Kat was “buried” together with the ground Oreo to form the crust of the cheesecake. And because some kind of commercial cheese were used, the texture was short of a thick and velvety kind. What was presented was more of a lighter version of the New York Cheesecake and lies somewhere in between the Japanese and American styles. Surprisingly, the cake was a hit with the ladies and old folks who felt the otherwise Philadelphia cream cheese kinda will be too enriched for them.

I am not a fan of cheesecakes or should I say, I am not a fan of any cakes. Though I am an avid baker, but I only enjoy the process and not the end products. So can you imagine I cut out like 20 pieces of this cheesecake, had 13 pieces distributed to colleagues and friends, own consumption of 4 pieces and still had balance 3 pieces which eventually still go to waste.

Kit Kat Oreo Cheesecake

Ingredients

Instructions

  1. Break the kit kat wafers into small pieces and distribute evnly over the base of a 20-23 cm springform tin (I used the usual square tin). Mix the crushed oreo and melted butter until well blended. Press onto bottom of the tin over the kit kat wafers.
  2. Bake the biscuit base at 160 degrees for 10 minutes and set aside to cool.
  3. Mix cream cheese and sugar until smooth. Add vanilla essence and whipped cream until well blended. Add eggs one at a time and cream until smooth.
  4. Add whipping cream and cream until well combined. Add quartered oreo cookies and stir until well mixed.
  5. Pour the cream cheese filling over the prepared cookie base. Combine the cocoa powder and water until well mixed. Drip onto surface of cream cheese and stir patterns on the surface using a skewer.
  6. Bake at 160 degrees for 50 minutes or until centre is almost set. Turn off the oven and leave the cake to cool in the oven with the door slightly open for 1 hour.
  7. Run a small knife around the rim of the pan to loosen the cake. Set aside to cool. Cover the cake and refrigerate for 5 hours or overnight.

    • Hihi casandra, I used the normal size of the kit kat bar, not the small size if I didn’t remember wrongly. It depends on how big the cake base that you intend to make as well. Of course, you are free to add in more if you prefer more kit kat and reduce the oreo accordingly ! :)
