Sigh. There are really alot of things in life which we cannot control. Many unhappy things have happened over this long dreary weekend. I was forced to face with some real nasty situations which came very suddenly. Though expected, but never expect it to happen so fast, so quick. Hurt, betrayal, lies, anger, accusations ~ a bundle of all these emotions. Times and again, good advise have fallen on deaf ears. Yet when problems and troubles surfaced, I have to face it and live through it. Things have boiled to a stage where it can no longer be turned back. I tried, tried and tried. That many times is equivalent to that many disappointments. What can I do now ? ~ Nothing, nothing anymore. I no longer want to do anything for anybody anymore.
Fortunately, a long-time good friend came over. We even had a mini-baking session ! As it was her first baking session and she had really limited time, so I suggested something fast, simple and fuss-free ! Only 2 bowls were used, one for the dry and the other for the wet ingredients. Made cleaning up easy too ! We made some real moist and chocolately mini muffins. All thanks to Valrhona chocolate powder !
Coincidentally, the theme for Aspiring Bakers this month happened to be chocolate. I am so in time for this !

Makes 24 mini muffins.
Ingredients :
112g plain flour
1 tsp bakingf powder
1/4 bicarbonate of soda
1 tbsp cocoa powder
84g sugar
70g chocolate chips
120ml chocolate milk
45ml vegetable oil
1 egg
1/2 tsp vanilla essence
Method :
1. Pre-heat the oven to 200 degrees C. Grease the muffin tray or prepare the cases.
2. Sieve together the flour, baking powder, bicarb and cocoa.
3. In a separate bowl, mix together the milk, oil, egg and vanilla. Add the sugar and chocolate chips and then re-sieve the flour mix on top. Mix quickly and lightly.
4. Pour the batter into the muffin tray. Sprinkle extra choc chips on top and bake at 200 degrees C for 15 minutes for mini muffins or until well-risen. Cool on a wire rack.
