It’s April Fools’ Day ! Another fresh new month has begun and all of us are back on our tracks after a week’s long of island wide mourning. So let’s have something cheerful and light to mark the beginning of a new month with these Rilakkuma cookies ! My initial plan to ice these cookies were nevertheless scrapped, despite even making the efforts to purchase all the necessary ingredients. And was thinking of using it as a pie crust too, but somehow it never work out as well. With that bit of strength and time left, I flipped through my cookies cutters box and decided on these instead.
I added a dash of chocolate powder to it for that extra chocolately taste since the butter that was used wasn’t superbly butter-ly and defeat the purpose of having them as butter cookies.
Oh well, it doesn’t look too bad right ? The kids will love these, I suppose. Isn’t overly sweet too with a slight chocolate crunch. Most importantly, it’s always the cuteness overload that counts and not exactly the taste.

Am so looking forward to the long weekend… I had so much plans to DIY the house in various ways now… In fact, I realised I am seldom free when I am back home now, it’s always either doing this or that, especially when my mind is set on doing something. My mama said I am bo liao, but I find great enjoyment in beautifying my place of stay and comfort. Oh yes, not forgetting shopping for the “tools” to doing it too. Has that become a new hobby of mine too ? *I wonders* Hopefully it isn’t a 3-minute one again !! :p
- 140g unsalted butter
- 100g sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 260g flour
- 10g chocolate powder (or more as desired)
- Sift the flour, baking soda and chocolate powder in a bowl and set aside.
- Combine and butter and sugar in a bowl of a stand mixer and beat till well combined.
- Add the egg and vanilla extract and continue to beat on slow speed until well mixed.
- Add the flour mixture and continuing on low speed, beat till all the flour has incorporated into the dough.
- Roll the dough into 3mm thickness and cut out desired shapes using a cookie cutter.
- Place the cut out shapes onto a baking tray lined with baking paper and bake at 150 degrees for 30 minutes.
- Let the cookies cool completely before storing them in air tight containers.
